严格意义上的顶级老山檀香木，是指至少六十年以上的老树，而且砍伐后至少经过安放二、三十年（有说安放四十年后气味始臻化境）使木性真正达到醇和的状态，其味是纯正、极柔和、温暖而香甜的木香，又微带玫瑰香、膏香与动物香，香气前后一致而十分持久。而即使六十年以上的老山檀香木，砍伐后未经陈化，还在浓烈味道的阶段也不是最好的檀香。
通常按照色泽把印度老山檀香珠，分为黄肉、红肉、黑肉三种。黑肉是最为少见的。印度檀香木随年龄的增长，由黄褐色变为深褐色以至红褐色。我认为印度檀香木最高的境界是到达深、红褐色，这就是所谓的黑肉檀香。从木材学上来说，檀香木越老油性越大，随年龄的增长，从不沉水走向沉水，头沉尾浮则是一种中间的状态。

Usually, according to the color, Indian sandalwood beads are divided into yellow meat, red meat and black meat. Black meat is the rarest. With the increase of age, Indian sandalwood has changed from yellow brown to dark brown to reddish brown. I think the highest level of Indian sandalwood is to reach deep, reddish brown, which is the so-called black flesh sandalwood. From the perspective of wood science, the older sandalwood is, the more oily it is. With the increase of age, it never sinks to sink, while the head sinks and the tail floats.
